The FoodSave team at the Sustainable Restaurant Association (SRA) has been working flat out to help food businesses in London reduce their food waste and save money in the process. To date, the FoodSave waste audit average annual savings per businesses is a whopping £6,770, with an average of 5.3 tonnes of food waste and estimated packaging waste saved from landfill. Some number crunching of FoodSave’s results to date have identified where food waste is coming from in London kitchens. They’ve found the average value of food waste for London businesses is a staggering £19,800 annually. Customer plate waste is proving to be restaurants’ most expensive waste stream – at 41% of food waste, followed by ‘prepared not served’ which accounts for 15% of avoidable food waste.
